Comfort in a bowl
If one dish defines home cooking in Panama, it’s sancocho — a hearty chicken soup that’s served everywhere from family kitchens to political rallies, and famously prescribed as a hangover cure.
What’s in it
The classic version, sancocho de gallina, simmers free-range chicken with ñame (a starchy root), corn, and a generous hit of culantro (a pungent local herb related to cilantro). It’s typically served with white rice on the side.
Regional twists
The Azuero Peninsula is especially proud of its sancocho, and recipes vary by household and region. Some add other root vegetables or extra herbs.
Where to try it
Look for it at traditional fondas and family restaurants, especially at lunch. It’s the ultimate introduction to Panamanian comfort food.
